Don Papa celebrates Filipino modern food tradition, names first PH chef and shakers

Don Papa Rum recently named the first “Chef and Shaker 2019 Philippines” winners after the much-anticipated grand finale held at Martin Place Social in Bonifacio Global City. Following the competition’s great success in its European run, Don Papa Rum felt now is the perfect time to delve deep into the rich Filipino food tradition and brandish its modern evolution by way of food and cocktail pairing.

Five teams competed, with each dish and cocktail judged according to presentation, taste, harmony of the food-and-cocktail pairing, and brand use or story. Garnering a total score of 92 points, the judges declared Team Gecko consisting of Chef Kel Zaguirre of Locavore and mixologists Allius Abrazado of The Peak – Grand Hyatt and Enzo Luna of Run Rabbit Run as the best group.

Team Gecko’s overall theme was Filipino. Chef Kel’s dish “Wrong Sisig” is the Filipino favorite sisig with a curious twist. Served in a golden tin can, Wrong Sisig is a rillettes of pork belly, pork ribs, and bacon, mixed with pickled mushrooms with chili, and pickled red onion topped with ikura (salmon roe). To heighten up the flavor, the dish is served with an emulsion of sinamak (spiced vinegar) and ginger sauce.

The winning Chef and Shakers will receive an all-expense paid trip to London in October, including access to the London Cocktail Week and guest shifts at Trade Venues, with a thousand pounds pocket money (roughly P68,000).
