Side Dishes: Fairmont Pacific Rim Hotel celebrates a milestone

The Fairmont Pacific Rim Hotel is 10 years old — born in February, 2010, the same month as the Vancouver Olympics — and will celebrate with food and drink.

On March 11, Botanist restaurant chef Hector Laguna puts on a 10-course Pacific Northwest dinner ($268 per person) with dishes never to be seen again. On April 15 and 16, Botanist Bar does a pop-up collaboration with London’s Beaufort Bar at the Savoy Hotel, showcasing its Interpreted Magic cocktail menu ($148) paired with food by chef Laguna.

Dig into deeper pockets and eight guests can dine in the Prime Minister Suite on the 22nd floor starting with cocktails and a four-course dinner. The one-time personalized Ultimate Dinner Party with live music will be hosted by a special guest of honour. The package begins at $10,000 and requires a minimum 20 days notice.
